Pizza Recipe: Sicilian Thick Crust

Sicilian pizza, is a variety of pizza that originated in Palermo, Sicily. Unlike the more familiar Neapolitan pizza, it is typically square, with more dough, sauce and cheese. An authentic pizza recipe often calls for pecorino cheese and bits of anchovies.

Sicilian-style pizza has its toppings baked directly into the crust. Pizza Hut's "Sicilian Pizza", introduced in 1994, is not an authentic example of the style as only garlic, basil, and oregano are mixed into the crust);

In the United States, a Sicilian pizza is typically a square pie with dough over an inch thick. Similar to the dish known as tomato pie, this pizza is popular in Italian-American pizzerias throughout New York and New Jersey, and especially in Utica, New York, a city whose sizable Italian-American population is predominantly Sicilian. It is typically served in an aluminum baking sheet.
