3 1/2 Cups All-Purpose Flour
1 1/3 Cups (water)
1/2 Tsp instant dry yeast
1/2 Tsp Kosher Salt
Using Kitchen-Aid mixer:
Mix 2 cups flour and all the water and mix on level 1 (low) for 2 minutes
Let sit for 20 minutes.
Mix the remaining flour and yeast in and mix for 1 minute on level 1
Add salt and mix for 6 minutes on 1.
Let rest for ten minutes then form 2 dough balls and place in Tupperware container
Throw in the fridge for 24 hours then pull an hour before cooking coat the ball in cornmeal and make your pie. You need to cook it on a stone with your oven as hot as it goes.
1 (16 oz) can Crushed Tomatoes
1/2 cup Tomato Puree
2 tbsp oregano
1/4 tsp crushed red pepper (very, very small amount)
Mozzarella, Provolone, Asiago shredded.
Mozzarella, Provolone, Romano, and Parmesan shredded mix sprinkle with Oregano.
Bake at 450F but do not brown the cheese.
